They were born out of the quarantine period of the COVID-19 pandemic when I spent countless days being cooped up in a one-bedroom, New York City apartment with no outdoor space and a lot of extra time on my hands. I needed to focus on something positive, challenging, and delicious. I began by transforming a handful of favorite dishes into soup versions, or, in my parlance, I SOUPified them. My desire soon grew into a full cookbook of SOUPified recipes—which has never been done before. 

These thirty-one recipes (plus supporting recipes) are the weekend comfort food soups of your dreams—hearty compilations of flavor, color, and texture, many of which are meals in and of themselves. They are intended to bring people together around the cutting board, stove, and of course, the table. Whimsical and fun, they are meant to be shared!

Penne Alla Vodka Soup With Pancetta

Penne Alla vodka is actually a pretty controversial dish in terms of its origins. Many swear that it is an American invention, while others insist that it appeared on menus in Italy first. Regardless, there is no doubt that this vodka- and cream-laced tomato sauce paired with chunky penne pasta has become firmly entrenched as an Italian American classic in homes and restaurants alike. There’s a reason for that. IT. IS. GOOD.

As Americans, we love good tomato soup, and we also love good creamy pasta. So it seems logical that we should also love a creamy tomato soup that contains pasta, right? Yes, it does. Penne Alla Vodka Soup is like comfort food turbo-charged—one bite will not be enough. In fact, one pot will not be enough, and you may find yourself reaching for this recipe over and over throughout soup season. Don’t fight it. And don’t leave out the Garlic Confit and roasted red peppers! They add a touch of sweetness to the finished soup that complements the tomatoes perfectly. And that crispy pancetta topping?
