Enjoy This Tasty Italian Flatbread Recipe

Summer is officially here and perhaps you are thinking about eating something fresh and light on the hottest days. Piadina may be the solution - an Italian flatbread from the Romagna region in Northern Italy. Today, piadina is a popular street food as it is super easy to make and you can turn it into a wrap filled with your preferred ingredients. However, the recipe for piadina has humble and ancient origins: the first evidence of a similar preparation dates back to Ancient Rome and, since then, piadina has always been part of the region's peasant cuisine. 

Traditionally, it is made using lard together with flour and water but for this version, we will replace the lard with some extra virgin olive oil.

At the end of the article, you will find three delicious ideas on how to fill your flatbread. 

Ingredients (serves 4):

For the dough:

  • 1.8 cups (230g) all-purpose flour
  • 0.5 cups (125g) lukewarm water
  • 1 tbsp (15g) extra virgin olive oil
  • a pinch of salt

For the filling (1st option):

  • 7 oz (200g) Burrata cheese
  • 5 oz (150g) Parma ham
  • 2 oz (50g) rocket
  • extra virgin olive oil

Directions:

  • Let’s start by preparing the dough for our piadina. In a bowl add flour, lukewarm water (little by little), extra virgin olive oil and a pinch of salt. Mix the ingredients and then knead until they are incorporated. If you don’t want your hands to get sticky, you can add all the ingredients into a food processor instead and mix for 10 seconds.
  • Transfer the dough to a clean surface and knead again for a couple of minutes or until smooth. Cover with a cloth and let it rest for 20 minutes.
  • Cut your dough into 4 parts and, using a rolling pin, flatten each part into a disk of roughly 9 inches (22cm) in diameter. Now cook your flatbreads in a very hot pan for 2 minutes on each side.
  • It is time to prepare the filling. Add your burrata into a blender with a pinch of salt and a drizzle of extra virgin olive oil and mix until smooth. Spread your burrata on the piadina, add 4 slices of Parma ham and some fresh rocket and it’s ready!
  • As an alternative, you could fill your piadina with some pesto sauce, a few slices of Italian cooked ham and some Caprino cheese or Robiola cheese.
  • If you are a vegan, feel free to use roasted vegetables like eggplants, peppers, zucchini or sundried tomatoes. It really is up to your creativity!
